Pomegranate Quick Pickled Red Onions

  1. Thinly slice onion and place in jar with closing lid
  2. Add vinegar and salt, close lid
  3. Let onions pickle in refrigerator for a minimum of two hours
  4. Use on fish tacos, salads, on a mezze platter or dice into a relish
