Introduction to Indian Cooking Class
Making good Indian food takes time, patience, and a little elbow grease, but it’s something well within your reach. With the right tools and a basic understanding of spices, you can create a really fantastic Indian meal in your own kitchen.
Join us for a class on demystifying spices, understand the basics of curry building, enabling you to make some incredible dishes at home. In this class we will learn how to to make the classic Punjabi dish: Chicken Makhini, a marinated chicken simmered in a luxuriously spicy and layered tomato masala sauce. This dish translates to “Butter Chicken” but we will explore the dish paired with Arbequina olive oil for a slightly fresher take. In this class you will learn the best way to layer spices, so that you can make truly flavorful Indian dishes at home and you will also learn how to make adjustments to recipes to suit your own heat level preferences and taste.
Meet private chef Kusuma Rao (Kumi) of Ruchikala (The Art of Taste). Ruchikala is a personal chef service in Portland, Oregon and Tucson, Arizona focusing on inspired Indo-Mexican and world fusion Cuisine. Ruchikala focuses on flavorful and spicy fare using old world and modernist techniques. Ruchikala’s intricate use of house made spice blends create bold and unique flavors that leave a lasting impression. Kumi was our first featured chef at Red Ridge Supper Club last Spring and we are thrilled to have her back for this unique class.
